We love a good jelly shot. And we love a classic tequila sunrise. Put them together, and you’ve got something we can REALLY get behind! And, sure, you can make these in little plastic cups if you wish, but by adding the plain gelatin to this recipe, it’s sturdy enough to stand up on its own. Here’s a little party trick: if you’re cutting out shapes with cookie cutters, you don’t need to toss the scraps. You can heat them up and remold – or just enjoy a few off-cuts before the party.
3 oz Orange Flavored Gelatin
2 Plain Gelatin (2 Envelopes)
1 cup Orange Juice
1 cup Boiling Water
1 cup Mi CAMPO Blanco
3 oz Grenadine
In a medium mixing bowl, mix the orange gelatin and plain gelatin together to combine and set aside. Whisk in boiling water to the gelatin until dissolved. Add orange juice and tequila to the gelatin mixture and divide in half, adding grenadine to one half of the mixture. Prepare an 8x8 square pan by spraying lightly with cooking oil, and wipe out excess oil with a paper towel. Pour the red layer into a pan and refrigerate for one hour to softly set the layer before proceeding. Reheat the remaining orange gelatin mixture if needed until warm and carefully pour over the red layer. Chill until fully set, approximately four hours. When ready to serve, remove from the pan by placing it briefly in a warm water bath and invert on a cutting board. Cut into servings, and serve.
